Minestrone soup

Ingredients:

- 1 large onion

- 1 stick of celery

- 2 carrots

- 3 potatoes

- 3 tomatoes

- 250 g of white cauliflower (or substitute with broccoli, spinach, chard, cabbage, or pumpkin)

- 250 g of peas (or substitute with beans)

- 2 zucchinis

- Extra virgin olive oil

- Water

- Salt to taste

1. Begin by washing all the vegetables thoroughly and cutting them into 1 cm squares. For leafy greens, cut them into medium-sized leaves.

2. In a large pot, heat 2-3 tablespoons of olive oil over medium heat. Add the onion, carrot, and celery, and sauté for 3 minutes until softened.

3. Add the cauliflower, potatoes, and any other vegetables with a harder consistency. Cook for an additional 5 minutes.

4. Next, add the peas, zucchinis, tomatoes, and any other leafy or soft vegetables you're using.

5. Pour in 6-7 glasses of boiling water, enough to completely cover the vegetables. Bring the soup to a boil, then reduce the heat, cover, and simmer gently for 40-50 minutes.

6. Ensure that the vegetables remain intact and colorful throughout the cooking process. Add more boiling water if needed.

7. Season with salt to taste at the end of cooking.
