Seafood from the Oven
Enjoy a delightful seafood medley with this easy and flavorful oven-baked recipe. Perfect for a special dinner or a simple weeknight meal.
Ingredients:
- 8-12 large prawns, heads and shells on
- 8-12 mussels or large clams (or a mixture)
- 2 medium squids with tentacles, cleaned
- 150g butter
- Small bunch parsley, chopped, plus a little to serve
- 1 tsp smoked paprika
- 3 garlic cloves, crushed
- 1 lemon, zested then cut into wedges
- 1 red onion, sliced into rings
Instructions:
1. Preheat the oven to 200℃ (400℉).
2. Slice the red onion into rings. Do the same with the lemon. Crush the garlic and chop the parsley. Mix together.
3. In a large heavy pan, combine the onion, lemon, garlic, and parsley. Add a bit of oil and stir in the seafood.
4. Place the pan in the oven. Dot the remaining butter over the top, season well, and return to the oven for 10 minutes.
5. If any of the prawns haven’t turned pink or any mussels haven’t opened, move them around the pan to the hot spots, then return to the oven for another 2-3 minutes. Remove and discard any mussels which haven’t opened.
6. Scatter some parsley over and serve.
