Pizza Margherita

Ingredients:

- 250 or 330g of classic pizza dough

- Flour, for dusting surfaces

- 80 g of San Marzano tomatoes

- 100g mozzarella, chopped

- 5 g of extra virgin olive oil

- A few basil leaves

Instructions:

1. Note: Be sure to prepare the dough ahead of time to let it rise to room temperature before turning on the oven, about 4 hours before baking. Make your sauce ahead of time or use the time it takes to preheat the oven.

2. Fire up your pizza oven. The oven will need to reach 500°C on the baking stone inside. You can check the temperature inside your oven quickly and easily using a kitchen thermometer.

3. Using a small amount of flour, dust the pizza peel. Roll out the pizza dough until you obtain a 30 or 40 cm disk and place it on the pizza peel.

4. Garnish with tomato, mozzarella, extra virgin olive oil (leaving about 1 cm of free edge for the cornice).

5. Transfer the pizza to the oven and cook it for 1 to 2 minutes, rotating it every 20 seconds to achieve even cooking.

6. Once cooked, remove the pizza from the oven and add whole fresh basil leaves.
