Pasta Bolognese

Ingredients:
- 400g tomato puree
- 250g minced pork
- 200g minced beef
- 150g strained bacon
- 150g chopped carrot, celery, and onion
- Triple tomato concentrate
- White or red wine
- Butter

- Pepper
- Tagliatelle
Instructions:
1. Heat 3-4 tablespoons of olive oil and a knob of butter in a saucepan over moderate heat.
2. Add the chopped celery, carrot, and onion to the pan, and sauté until softened.
3. Add the diced bacon to the pan, and cook for 2-3 minutes.
4. Add all the minced meat to the pan, and increase the heat. Break up the meat with a spoon and cook until browned.
5. Pour in 80g of wine, and let it evaporate.
6. Reduce the heat, and continue cooking until the liquid is reduced, stirring constantly.
7. Season with salt and pepper.
8. Add the tomato puree and 2 tablespoons of tomato paste to the pan. Stir well to combine.
9. Bring the sauce to a boil, then cover and simmer over low heat for 2-3 hours, stirring occasionally. Add broth if necessary to maintain consistency.
10. Cook the tagliatelle in boiling salted water according to package instructions. Drain.
