Dutch pear pie

Ingredients:
Pie dough:
- 250 g wheat flour
- 150 g butter
- 3 tablespoons water
- 0.5 tsp salt
- 1 egg for brushing
Pie filling:
- 6 pears
- 2 tablespoons butter
- 1 dl walnuts, coarsely chopped
- 2 dl sugar
- 2 tablespoons cinnamon
- 1 dl pear juice
Instructions:
1. Pie base: Place wheat flour, diced butter, water, and salt in a food processor. Process until everything is well mixed. Knead the dough quickly, cover with plastic, and leave to chill for 30 minutes.
2. Roll out the dough until it is approximately 3 mm thick and quite round. Grease the pie tin with butter or tin fat and line the tin with pie dough right up to the edges. Remove any excess dough. Prick the bottom with a fork. Cover the base with baking paper and fill the base with dried peas.
3. Bake the pie base with the peas in the oven at 180 degrees for approximately 8-10 minutes until it starts to color.
4. Pie filling: Divide the pears into boats and fry them in butter together with the walnuts until they take on color. Add sugar and cinnamon and cook until the sugar melts. Pour in the pear juice and cook until it thickens.
5. Pour the pear mixture into the pre-baked pie crust.
6. Roll out the rest of the pie dough to the same thickness as the pie base and cut it into strips. Place them in a braided pattern over the pear filling.
7. Brush the pie lid with beaten egg and sprinkle with a little sugar.
8. Bake the pear pie in the oven at 180 degrees until the pie lid is golden for about 12-15 minutes. Let cool until lukewarm and serve!
