Homemade ciabatta bread

Ingredients:
- 200 g Manitoba flour
- 200 g 00 flour
- 2 tablespoons extra virgin olive oil
- 5 g salt
- 5 g fresh brewer's yeast (or 2 grams of dry brewer's yeast)
- 300 ml water
- 1 teaspoon honey (or sugar or malt)
For this recipe, you can use both fresh brewer's yeast and dry brewer's yeast. The preparation methods will not change even with the fresh one as there is so little yeast that it can be crumbled directly into the flour.
Instructions:
1. Place the Manitoba flour, 00 flour, and crumbled brewer's yeast (or dry brewer's yeast) in a large bowl.
2. Make a well in the center of the flours and add the extra virgin olive oil, honey, and gradually add all the slightly warm water.
3. Mix well with a spoon and, when the dough has formed, add the salt. Knead quickly with your hands even if the dough will be quite sticky.
4. Close the bowl with cling film and leave to rise in the fridge for 12 hours or at room temperature for four hours.
5. Once the leavening time has passed and it has made a lot of bubbles, take the dough, deflate it with your hands, and place it on a heavily floured work surface. Knead for 5 minutes and shape it into a ball.
6. Cover the dough with a clean cloth and leave to rise for about an hour in the oven with the light on.
7. After this leavening time, divide the ball into four equal parts. Roll out each part into a rectangle and then roll up the rectangle from the long side. Repeat with all four pieces of dough.
8. Place the rolls of dough on a baking tray lined with baking paper, cover with a floured cloth, and leave to rise for another 40 minutes.
9. Once the last leavening has passed, make a cut with a sharp knife on the surface of the ciabatta bread.
10. Preheat the static oven to 200°C and place a saucepan full of water on the lower level of the oven.
11. When the oven is hot, bake the ciabatta bread for 20 minutes. After 20 minutes, remove the saucepan and continue baking for another 10 minutes or until the ciabatta bread has a nice golden color.
12. Remove the ciabatta bread from the oven and let it cool completely before cutting and serving.
