Ingredients:

- 5 eggs

- 3 dl raw cane sugar (use a little less for everyday use)

- 600 g sifted spelled flour, or a mixture of finely ground and sifted spelled flour (or emmer or dala country wheat)

- 1 liter kefir milk

- 1 heaping teaspoon of baking soda

- 1 heaped teaspoon of corn salt

- 75 g margarine or butter

Instructions:

1. Prepare the Batter:

- Beat the eggs, sugar, baking soda, and corn salt together in a large mixing bowl until well combined.

- Mix in the kefir milk.

- Gradually stir in the flour until the mixture is smooth and free of lumps.

- Finally, stir in the melted butter until fully incorporated.

2. Cooking:

- Heat a pan or griddle over medium heat and grease it lightly with butter.

- Pour a ladleful of batter onto the hot pan and cook until bubbles form on the surface and the edges begin to look set.

- Flip the pancake and cook the other side until golden brown.
