Basil Pesto Sauce

Experience the authentic taste of homemade basil pesto, a delightful sauce crafted with olive oil, garlic, whole nuts, and Parmesan. Before we embark on this culinary journey, let's note that we'll be using a mortar for optimal results. Contrary to popular belief, this traditional method offers a superior outcome compared to a food processor. For the finest pesto, select only the most tender basil leaves, ideally harvested before the plant blooms. While a blender or food processor may suffice, purists swear by the time-honored technique of using a marble mortar and wooden pestle, preserving the basil's delicate flavors unlike the metal blades of modern appliances.

Ingredients:

- 50 leaves basil

- 26 grams garlic

- 30 whole nuts

- 18 grams Parmesan

- 85 milliliters extra virgin olive oil

- 2 grams salt

Instructions:

1. Rinse the basil leaves quickly, if necessary, or clean them with a damp cloth. Dry them between two sheets of absorbent paper.

2. Place the garlic in a food processor and chop finely. Add the whole nuts and basil, then blend until well chopped.

3. Gradually incorporate the grated Parmesan cheese and continue mixing until you achieve a smooth, paste-like consistency.

4. Slowly pour in the olive oil while blending, creating a creamy yet thick sauce. Add salt to taste, ensuring it's added only at the end to prevent basil discoloration.

5. Transfer the pesto into a jar and cover it with a layer of olive oil to prevent oxidation. Seal tightly or cover with cling film, then store in the refrigerator until ready to use.

With its aromatic fragrance and rich taste, homemade basil pesto adds a burst of freshness to any pasta dish or appetizer. Make a batch of this delightful sauce and enjoy its vibrant flavors whenever you crave a taste of Italy.
