Christmas caramel pudding

Ingredients:

- 6 dl whole milk

- 3 dl heavy cream

- 1 vanilla pod

- 8 eggs

- 5 tbsp sugar

Caramelization of the Mold:

- 2 dl sugar

Instructions:

1. Caramelize the Mold: In a saucepan over medium heat, melt 2 dl of sugar until it turns into a light brown liquid. Pour the melted sugar into a rectangular mold (2-liter capacity) used for bread. Quickly rotate the mold to coat the bottom evenly with the melted sugar before it hardens. Set the mold aside.

2. Prepare the Pudding: Bring the whole milk, heavy cream, and vanilla pod to a boil in a saucepan. Once boiled, remove from heat and allow the mixture to cool slightly. Remove the vanilla pod.

3. In a separate bowl, lightly whisk together the eggs and sugar. Do not whip into a frothy mixture. Sift the egg mixture into the lukewarm milk mixture and stir well to combine.

4. Pour the mixture into the caramel-coated mold. Preheat the oven to 120°C and place a long pan in the middle of the oven. Set the mold in the long pan and pour boiling water into the pan until it reaches about 3 cm up along the edge of the mold.

5. Bake the caramel pudding in the water bath for approximately 2 hours, or until set. Remove from the oven and refrigerate the pudding overnight.

6. Unmold and Serve: The next day, prepare a suitable oblong dish with slightly high edges. Take the chilled caramel pudding out of the fridge and loosen the edges with a knife. Carefully invert the mold onto the dish, allowing the caramel sauce to flow over the pudding.

7. Store the caramel pudding in the fridge until ready to serve. Slice and enjoy this indulgent dessert with loved ones during the festive season!
