.

Ingredients:

**For the pie dough:**

- 250g flour

- 170g butter

- A pinch of salt

- 6-7 tablespoons of cold water

**For the filling:**

- 300g cherries

- 50g sugar

- 1 tablespoon corn starch

Instructions:

**Pie Dough:**

1. Mix flour and salt together. Add the butter and mix well. You can use a food processor, but I prefer to do this by hand.

2. Add cold water and mix until well combined.

3. Wrap the dough in plastic wrap and refrigerate for about 45 minutes.

4. Divide the dough into two parts, one slightly larger than the other.

5. Using a rolling pin, roll out the larger part and place it in a greased baking tray.

6. Add the excess dough to the smaller part.

**Filling:**

1. Spread the cherries evenly over the dough in the baking tray.

2. Sprinkle the sugar and corn starch over the cherries.

**Assembly:**

1. Roll out the smaller part of the dough and place it over the cherry filling.

2. Connect the edges of the dough to seal the pie.

3. Make small strips with any remaining dough and lay them on top in a lattice pattern.

4. Pierce the pie with a fork to allow steam to escape.

5. Bake in a preheated oven at 180°C (350°F) for about 35-40 minutes, or until the crust is golden brown.

Let the pie cool slightly before serving.

I hope you enjoy making and eating this cherry pie as much as I do. It's a family favorite that always brings smiles to the table. Whether it's a special occasion or just a regular day, a slice of homemade cherry pie is sure to make it memorable. Happy baking!
