Roasted Chicken
The classic roast chicken is one of the family's favourite lunch recipes because everyone at the table can choose their favourite part of the chicken. Crispy crust, juicy meat, and a side dish of potatoes and vegetables, traditional for the coastal area, make the perfect Sunday lunch for the whole family. After such a lunch, all you have to do is rest and enjoy the rest of the day.
Ingredients:
- 1 fresh chicken
- 1 onion
- 2 carrots
- 1 lemon
- 25 grams spices as desired (salt, pepper, vegetables, basil)
- Potatoes (amount as desired)
- 1 spoon of lard for juicier potatoes
Instructions:
1. Preheat the oven to 200°C (390°F) and prepare the central place for roasting the chicken in such a way that there is no shelf above it.
2. Peel the carrots, wash them, and then chop them into smaller pieces.
3. Prepare the onion in the same way, but you don't have to chop it into small pieces like when preparing goulash, but into larger pieces.
4. Arrange the vegetables in the bottom of the baking dish, and we recommend using a deeper dish suitable for the oven to allow the juices to make their own sauce.
5. Apply salt and pepper to the washed chicken and add basil, which gives the chicken a very special aroma.
6. Cut the lemon into several parts and place it on top of the vegetables in the bowl so that the chicken is directly above it.
7. Pay special attention to the chicken breasts and drumsticks, which you will spread with melted butter so that they are crispy, but not dry when the chicken is baked.
