Baked Salmon

Baked salmon is a healthy and delicious option that's perfect for a quick dinner. This recipe combines fresh salmon fillets with a medley of colourful vegetables, all seasoned with a blend of thyme and oregano. The result is a flavourful and satisfying meal that's easy to prepare and sure to impress. It's a versatile dish that can be customized with your favourite vegetables and herbs, making it ideal for using up what you have in the fridge.

Ingredients:

- 600 g salmon fillet, without skin and bones

- 1 red onion

- 1 red pepper

- 0.5 leeks

- 1 carrot

- 0.5 green squash

- 3 tbsp olive oil

- 1 pinch of thyme, dried

- 1 pinch of oregano

- Salt and pepper

Instructions:

1. Set the oven to 200°C (390°F).

2. Cut the salmon into serving pieces.

3. Cut the red onion into wedges, the pepper into pieces, and the leek, carrot, and squash into slices.

4. Mix the olive oil, thyme, oregano, and vegetables in a bowl, and pour the mixture into an ovenproof dish.

5. Drizzle a couple of tablespoons of water over the vegetables and place the salmon pieces on top.

6. Sprinkle with salt and pepper, and cover the form with aluminum foil.

7. Bake in the oven for approx. 20-25 minutes. Check if the fish is done by pressing lightly on it. If it flakes, it is ready to serve.

8. Serve with light cream.

Tip: Vary with vegetables and herbs as desired. This is a great dish to make if you have some tired vegetables in the fridge! Feel free to try sweet chili sauce, soy sauce, or lemon juice on the fish to give it a new taste.
